Resurgences 2021

A completely unique white wine from the Cahors - a region famed for its robust reds. Resurgences encapsulates elegance, vibrancy, complexity and surprise. The wine balances perfectly between power and elegance, with complex notes of fleshy white fruits, savoury spice and nuts sitting against a backdrop of minerality and well-integrated acidity. A wonderfully layered wine full of intrigue.

Made from an experimental, field-blend plot planted by Maya and Nicolas in 2017 containing Noual, Sylvaner, Sauvignon Blanc, and Chenin Blanc. The aim here is not necessarily to reflect one particular grape-variety, rather, the place itself. The plot is just 0.8 hectares, sitting atop a hillside on a South-facing slope, with vines planted on clay-limestone soils. The grapes are hand picked before a portion see a very short skin maceration in order to add texture, the remainder are slowly direct-pressed. Fermentation and aging take place large Alsatian foudre for over two years, where the wine develops some mild oxidative notes- nuts, spice and opulence. One that's tasting great now, but will only get better with time.
